Ice Cream Layer Cake

by

I love desserts!  I am always on the lookout for a new, user friendly recipe.  Our amazing guest, Katie from Sweet Rose Studio is here today to share a fun dessert idea that would be perfect for an impromptu date night at home.  Take it away, Katie….

Hi there Dating Divas readers! I’m Katie and I blog over at my little slice of the internet: Sweet Rose Studio. I love sharing all things related to crafts, parties, recipes, and just being a wife and momma! I’m here today sharing one of my husband’s favorite recipes that I’ve put together. This “Ice Cream Layer Cake” is a hot commodity in our home and never lasts very long. Since summer time is in full swing here in Phoenix {but let’s be honest, it’s been this way since late March!}, it’s the perfect time to come up with all kinds of chilled desserts.

There aren’t many ingredients to this cake and it’s super easy to create. No baking required!

      Ingredients

  • 1 carton COOL WHIP
  • 12 Ice Cream Sandwiches
  • 1 carton Chocolate Chip Cookie Dough Ice Cream (softened)
  • 1 jar Magic Shell Topping
  • Chocolate Chips (to taste)

Note:

This recipe is a perfect summer treat filled to the brim with ice cream, chocolate, and chocolate chips. For a different twist, you could substitute cookie dough chunks for the chocolate chips.

Directions:

1. Create a base layer for the cake with the ice cream sandwiches in a 13×9 pan. Press them in firmly. They should be snug.

2. Scoop half of the ice cream on top of the ice cream sandwiches. Spread evenly.

3. Apply a thin layer of Magic Shell and sprinkle chocolate chips to taste. {I always appreciate more chocolate chips rather than less, but you may be different. The husband even suggested mini chocolate chips for next time.}

4. Place pan in the freezer for appx 15 minutes, or until ice cream layer has hardened.

5. Take the pan out of the freezer. Spread the remaining ice cream and add another layer of Magic Shell and chocolate chips.

6. Freeze the Ice Cream Layer Cake until ready to serve. Add COOL WHIP and sprinkles to the cake before serving.

Sometimes our busy schedules and lack of babysitters doesn’t always allow for a date night, but I know that I can make a special favorite dessert of the husband’s and we can share a special moment, just the two of us, after the kidlets are in bed for the night. It’s those little things that help keep our marriage special and strong!

Thanks again to The Dating Divas for having me here today; I’ve loved visiting! Other than the Sweet Rose Studio blog, you can find me on Facebook, Twitter, Pinterest, and on Instagram at sweetrosestudio. I’d love for you to say hi!
