In the Kitchen - Birthday Edition!

No Birthday is a BIRTHDAY without the cake and food…right?! A few of our Divas pulled together some mouthwatering ideas for your man’s next birthday. Check out what Corie, Kari, Kristen, Tara, and Wendy cooked up for their man’s last B-day! Oh…and there’s a GIVEAWAY at the end!!!

My husband is a big fan of smores! Who isn’t? Chocolate, marshmallows, graham crackers…wow, I am making some right now! For my man’s big 3-0, I decided to make smores with a twist. Check out this awesome and EASY recipe!

Indoor Smores

3/4 cup light corn syrup

1 pkg. chocolate chips

1 tsp. vanilla

3 tbsp. butter

1 box of Golden Graham Cereal

3 c. mini marshmallows

Heat syrup, butter, and chocolate chips to a boil (be sure to stir constantly). Remove from heat and stir in vanilla. Pour over cereal in a bowl. Be sure to coat all of the cereal. Add marshmallows 1 cup at a time. Finally, place cereal in a 9×13 pan. I like to press down the mix and let stand for one hour before serving.

Smore’s not your man’s thing? What about a carrot cake? This recipe has been in Kari’s family for generations.

My dad’s mother used to make this cake and when she passed away, her husband made it for us. So every time that I taste this cake it takes me back. When my grandfather passed away, I decided to make this cake as a surprise for my dad’s birthday. Since no one had learned how to make it (my grandfather made it to perfection – so why learn?), I decided to try my hand at it and see how it went. Luckily, the taste of this cake is divine.

This cake takes some practice but its SO good that it is worth it to try! Especially if your darling spouse is a carrot cake fan. Use this recipe – you can’t go wrong!

I LOVE the look of fondant on cake. You know that smooth frosting that looks so pretty and is seen mostly on wedding cakes it seems? Oooh, if only I could do this on every single birthday cake I made for my family…Oh wait, what? I can?? Most party stores have the option of buying pre-made fondant and is pretty easy to use and not too expensive. the downside? It tastes like chalk!  I then found this awesome recipe and tutorial on how to make marshmallow fondant.

What a brilliant idea! Marshmallow frosting! YUMMY!  So I tested it out on my daughters birthday cake this past year.  And you know who was caught gobbling this up and begging for more?? Hint…It wasn’t my daughter…

Try marshmallow fondant on your hubby’s next birthday cake and he sure will be pleased! (I bought circle cookie cutters from Michael’s to use for cutting out my polka dots.)

If fondant isn’t your thing, maybe this idea will be “FORE” you!

I about died when my friend showed me the cutest “Cupcake cake” which was decorated to look like a golf course. This cake is the perfect choice for any avid golfer. My husband’s favorite thing, besides me…lol, is golfing! It’s one of his passions, and he’s pretty darn good at it too! I am SOOO not a chef {that would be our Diva, Kari} but I decided to bite the bullet and produce a golf masterpiece for my man anyway. He is definitely worth the effort!

If you would like to recreate this…here are a few tips/ingredients I will pass along.

  • FIRST, frost all the sand traps with white frosting AND frost the rest of the cupcakes with green frosting.
  • The sand trap is made from crushing Vanilla Wafers into dust …ok, ok, not dust…but it sure crunches up great and it looks SO realistic! Just roll the tops of 6-7 cupcakes in it.
  • The “green” (area around the hole) is just those green crystal sprinkles you buy…it also looks SUPER realistic! Roll the tops of 7 cupcakes in this.
  • I took the “easy” way out and instead of doing a million and one blades of grass, I dyed coconut green and sprinkled that on top of the cupcakes that were representing the “rough.”
  • I cut out fruit leather to create the flag, a pretzel stick is the pole, and an over sized chocolate chip turned upside-down is the hole.
  • The golf ball…GULP! That was hard! It’s a gumball dipped in corn syrup and then coated with white sprinkles. It is balancing on a yellow smartie … as the tee!

That is everything you need to know to recreate this fabulous Golf Course Cake “fore” your man. He is going to love it…my man sure did!

Lastly, we have another cupcake idea that your man is sure to love. Peanut Butter Cupcakes!! Need I say more?? It started this year, and WILL be a tradition for my hubby’s birthday here on out. He is so in love!! And they are incredible! The recipe comes out of the most amazing book… 101 Gourmet Cupcakes in 10 minutes, by Wendy Paul, AND it’s your lucky day! Wendy has given me permission to share this recipe as a sneak peek of her book with all of you!!

Cupcakes

1 box of chocolate cake mix

3 eggs

1 cup milk

1 bag of chocolate peanut butter cups

Mix together cake mix, eggs, and milk. Pour 2 tablespoons of batter into paper liners and place peanut butter cup on top. Fill papers 3/4 full. Bake at 350 degrees for 15-18 minutes. Remove from oven and allow to cool.

Frosting

1 cup of peanut butter

1/2 cup of butter (room temperature)

2 cups of powdered sugar

3-4 Tbsp. of milk or cream

1 tsp. of vanilla extract

Cream butter and peanut butter together in a bowl, mix until light and fluffy. Add sugar, 3 Tbsp. milk or cream and vanilla. Start slow, mix together increasing the speed. Mix until smooth and creamy. Add 1 Tbsp milk or cream if too thick.

    It’s my birthday and I’ll cry if I want to! One of my birthday memories was when I was about 3. My family went camping and we celebrated my birthday while we were there. My cousin tried to “help” me blow out the candles and I punched him to make him stop.

For my husbands birthday one year I gave my him some tickets to a show at Desert Star Playhouse in Salt Lake City and “coupons” to use at an adult novelty store {wink}. However, after the show I had a kidney stone attack and we ended up in the ER instead. We like to joke about it now every year on his birthday.

    I’m a new subscriber and love it!! My hubby is a type one diabetic, so birthdays aren’t always his favorite. But we have learned to get really good at the “sugar-free” cakes and cupcakes, so those are definitely a favorite!

    My favorite cake ever was ashared cake with my brother when I was 8 and he was 6…half ninja turtle coming out of the sewer and half a giant Barbie with a frosting dress! Best cake of all time, gotta admit!

    It’s my birthday and I’ll cry if I want to! My favorite birthday would have to have been this last one. We got a group of girls together (single and married), drove to Park City on a Friday afternoon to pamper ourselves and shop until we dropped. We ate food, cruised the outlets and Main street, got pedicures, sat in the hot tub, went to bed early. Best 24 hours we’d spent in a long while!

    My favorite birthday memory is on my husband’s birthday the first year we were together…I knew he hated country music, but he didn’t know that I knew, so I told him I had tickets to a huge country music concert that was going on that night, but planned a switch-and-bait. I played it up and acted all excited to go and he didn’t want to disappoint me by saying he didn’t want to go, then I suprised him with a day of fun at a mountain resort (alpine slide, mountain coaster, zip-lining, hedge maze, hiking, etc.) and dinner at a Brazillian restaurant (his favorite).

    I think all my birthdays were wonderful because I got to share them with my twin sister. We always had double everything! :) Any theme we wanted, we got or if we were at odds with the theme we just meshed the two! It made for some pretty interesting parties! I will never forget them.

First you need to know that the special thing about turning 16 is that is the age when you can start dating! On with the story….My mom told me to get all dolled up and she was going to take me out to dinner. After getting in the car my mom told me we had to make a quick detour to pick someone else up – we ended up picking up 3 of my guy friends {who all happen to have a some kind of flower for me}. We all went to the Macaroni Grill for dinner – my mom, me, and my 3 dates! It was so much fun to have 3 “first” dates! My mom is so cute!

I turned 23 and my mom drove up from three hours away and surprised me with a day of shopping, lunch and fun! Then my husband planned a surprise dinner with all of my family at my FAVORITE place, the Olive Garden! Great Birthday!! :)

    “It’s my birthday & I’ll cry if I want to!” ….Last year I had gone downstairs to get something…when I came to the top of the stairs my husband and 1 yr old daughter where standing there. My daughter was holding a balloon 2 and 1/2 times her size and my hubby had a dozen roses. It was a sweet, simple surprise! :)
