In the Kitchen - Birthday Edition!

No Birthday is a BIRTHDAY without the cake and food…right?! A few of our Divas pulled together some mouthwatering ideas for your man’s next birthday. Check out what Corie, Kari, Kristen, Tara, and Wendy cooked up for their man’s last B-day! Oh…and there’s a GIVEAWAY at the end!!!

My husband is a big fan of smores! Who isn’t? Chocolate, marshmallows, graham crackers…wow, I am making some right now! For my man’s big 3-0, I decided to make smores with a twist. Check out this awesome and EASY recipe!

Indoor Smores

3/4 cup light corn syrup

1 pkg. chocolate chips

1 tsp. vanilla

3 tbsp. butter

1 box of Golden Graham Cereal

3 c. mini marshmallows

Heat syrup, butter, and chocolate chips to a boil (be sure to stir constantly). Remove from heat and stir in vanilla. Pour over cereal in a bowl. Be sure to coat all of the cereal. Add marshmallows 1 cup at a time. Finally, place cereal in a 9×13 pan. I like to press down the mix and let stand for one hour before serving.

Smore’s not your man’s thing? What about a carrot cake? This recipe has been in Kari’s family for generations.

My dad’s mother used to make this cake and when she passed away, her husband made it for us. So every time that I taste this cake it takes me back. When my grandfather passed away, I decided to make this cake as a surprise for my dad’s birthday. Since no one had learned how to make it (my grandfather made it to perfection – so why learn?), I decided to try my hand at it and see how it went. Luckily, the taste of this cake is divine.

This cake takes some practice but its SO good that it is worth it to try! Especially if your darling spouse is a carrot cake fan. Use this recipe – you can’t go wrong!

I LOVE the look of fondant on cake. You know that smooth frosting that looks so pretty and is seen mostly on wedding cakes it seems? Oooh, if only I could do this on every single birthday cake I made for my family…Oh wait, what? I can?? Most party stores have the option of buying pre-made fondant and is pretty easy to use and not too expensive. the downside? It tastes like chalk!  I then found this awesome recipe and tutorial on how to make marshmallow fondant.

What a brilliant idea! Marshmallow frosting! YUMMY!  So I tested it out on my daughters birthday cake this past year.  And you know who was caught gobbling this up and begging for more?? Hint…It wasn’t my daughter…

Try marshmallow fondant on your hubby’s next birthday cake and he sure will be pleased! (I bought circle cookie cutters from Michael’s to use for cutting out my polka dots.)

If fondant isn’t your thing, maybe this idea will be “FORE” you!

I about died when my friend showed me the cutest “Cupcake cake” which was decorated to look like a golf course. This cake is the perfect choice for any avid golfer. My husband’s favorite thing, besides me…lol, is golfing! It’s one of his passions, and he’s pretty darn good at it too! I am SOOO not a chef {that would be our Diva, Kari} but I decided to bite the bullet and produce a golf masterpiece for my man anyway. He is definitely worth the effort!

If you would like to recreate this…here are a few tips/ingredients I will pass along.

  • FIRST, frost all the sand traps with white frosting AND frost the rest of the cupcakes with green frosting.
  • The sand trap is made from crushing Vanilla Wafers into dust …ok, ok, not dust…but it sure crunches up great and it looks SO realistic! Just roll the tops of 6-7 cupcakes in it.
  • The “green” (area around the hole) is just those green crystal sprinkles you buy…it also looks SUPER realistic! Roll the tops of 7 cupcakes in this.
  • I took the “easy” way out and instead of doing a million and one blades of grass, I dyed coconut green and sprinkled that on top of the cupcakes that were representing the “rough.”
  • I cut out fruit leather to create the flag, a pretzel stick is the pole, and an over sized chocolate chip turned upside-down is the hole.
  • The golf ball…GULP! That was hard! It’s a gumball dipped in corn syrup and then coated with white sprinkles. It is balancing on a yellow smartie … as the tee!

That is everything you need to know to recreate this fabulous Golf Course Cake “fore” your man. He is going to love it…my man sure did!

Lastly, we have another cupcake idea that your man is sure to love. Peanut Butter Cupcakes!! Need I say more?? It started this year, and WILL be a tradition for my hubby’s birthday here on out. He is so in love!! And they are incredible! The recipe comes out of the most amazing book… 101 Gourmet Cupcakes in 10 minutes, by Wendy Paul, AND it’s your lucky day! Wendy has given me permission to share this recipe as a sneak peek of her book with all of you!!

Cupcakes

1 box of chocolate cake mix

3 eggs

1 cup milk

1 bag of chocolate peanut butter cups

Mix together cake mix, eggs, and milk. Pour 2 tablespoons of batter into paper liners and place peanut butter cup on top. Fill papers 3/4 full. Bake at 350 degrees for 15-18 minutes. Remove from oven and allow to cool.

Frosting

1 cup of peanut butter

1/2 cup of butter (room temperature)

2 cups of powdered sugar

3-4 Tbsp. of milk or cream

1 tsp. of vanilla extract

Cream butter and peanut butter together in a bowl, mix until light and fluffy. Add sugar, 3 Tbsp. milk or cream and vanilla. Start slow, mix together increasing the speed. Mix until smooth and creamy. Add 1 Tbsp milk or cream if too thick.

    My favorite birthday was my 16th! I moved from Washington State to Utah when I was 14 and 1/2 and it was a hard move for me. I missed my friends so much and had to start high school without knowing anyone! But for my 16th birthday my mom totally surprised me and flew my best friend down from Washington to visit me for a week! I was in Salt Lake at a youth activity on Temple Square and when I came out of the Legacy Theater in the Joseph Smith Memorial Building my mom was standing there! She told me to come in the bathroom because she had bought me an outfit and wanted me to try it on… and I walked in to the bathroom thinking, “That’s weird she left an outfit in here, someone could steal it…” As I’m walking in looking around for said “outfit” I see my best friend standing there! I started crying tears of joy. It was the best birthday ever. I hope someday to be that amazing of a mother!

    One of my favorite birthday memories is last years birthday. I went out with a bunch of friends & a date to Samuari 21… the date is now my husband. :)
    When I was younger I always celebrated my birthday with my sister. Her birthday is the day before mine. We are 1 day less than a year apart.

    I turned 30 last year and was without my hubby. My family surprised me with cake and lots of fun. They made me feel like I wasn’t forgotten for that special day. It was very fun even without my love. :-) And he sent me flowers and a Spa Day gift certificate! :D

    birthday memory:
    for my husbands birthday, we usually do some sort of theme with the food. One year it was “southern” food and I made gumbo and blackened fish and more. Another year it was Mexican: tacos, caviche, et cetera.
    One year we did a simple (or not so much) ice cream sunday bar. This year the theme was German food. Schintzle is absolutely amazing and actually easy to make!

BUT, thank goodness for Costco and their wonderful chocolate, chocolate and chocolate cake. It’s devine and he loves it. One day I will be able to make him something out of this world!

    My wonderful birthday moment is when my hubby got me a pink camera! I was so shocked because I hadn’t asked for one, but I REALLY wanted/needed one! And it was pink! :)

But my all time favorite was when my best friend threw me a surpise party for my 22nd birthday and at that same time my husband and I got back together and ended up getting married! Good times!

    At first I thought I was supposed to share a bad birthday story and I have a whole bunch of those.

    My best birthday was probably when I turned 19- I was dating a guy at college and the semester ended about a week before my birthday and he (and my older sister’s boyfriend) came out to meet my parents my birthday weekend. We had a great time and a little bit after my birthday he asked me to marry him.

    It’s my birthday and I’ll cry if I want to! My best birthday memory? When I was 16 my mom made all these awesome signs and posted them on posts so I would see them on the way to school, and a huge sign on the fence at school. I guess I like attention. It was fun to feel special!

    My favorite birthday memory is from my 16th. I actually woke up to a mustang convertible in the driveway. I was so excited until I tried to start it and it made a horrid noise. The deal was I got the car after I helped my dad replace the fly wheel. That lesson in car care still helps me today.

    My husbands favorite birthday treat is a mint chocolate chip ice cream cake! In fact, he loves that so much, that was what we served as his Groom’s cake at our wedding! It was the first cake completely gone!! lol!

    I will always remember my 9th birthday. It was the last one I was able to spend with my dad. He passed away a few months later. It was wonderful to take all my gifts to the hospital and share them with him even though he wasn’t actually there for the party.

    My hubby’s favorite birthday dessert is icecream cake…I make a mock one during the year with oreo as the base…but on his actual birthday, it is the real deal!!!

    It’s my party and I’ll cry it I want to. My favorite birthday was the one where I turned 13. My church had a surprise party for me and it really was a surprise. I felt so special, not to mention I thought something magical was happening since I had just become a teenager. *sigh*
