In the Kitchen: Birthday Edition!


No Birthday is a BIRTHDAY without the cake and food…right?! A few of our Divas pulled together some mouthwatering ideas for your man’s next birthday. Check out what Corie, Kari, Kristen, Tara, and Wendy cooked up for their man’s last B-day! Oh…and there’s a GIVEAWAY at the end!!!

My husband is a big fan of smores! Who isn’t? Chocolate, marshmallows, graham crackers…wow, I am making some right now! For my man’s big 3-0, I decided to make smores with a twist. Check out this awesome and EASY recipe!

Indoor Smores

3/4 cup light corn syrup

1 pkg. chocolate chips

1 tsp. vanilla

3 tbsp. butter

1 box of Golden Graham Cereal

3 c. mini marshmallows

Heat syrup, butter, and chocolate chips to a boil (be sure to stir constantly). Remove from heat and stir in vanilla. Pour over cereal in a bowl. Be sure to coat all of the cereal. Add marshmallows 1 cup at a time. Finally, place cereal in a 9×13 pan. I like to press down the mix and let stand for one hour before serving.

Smore’s not your man’s thing? What about a carrot cake? This recipe has been in Kari’s family for generations.

My dad’s mother used to make this cake and when she passed away, her husband made it for us. So every time that I taste this cake it takes me back. When my grandfather passed away, I decided to make this cake as a surprise for my dad’s birthday. Since no one had learned how to make it (my grandfather made it to perfection – so why learn?), I decided to try my hand at it and see how it went. Luckily, the taste of this cake is divine.

This cake takes some practice but its SO good that it is worth it to try! Especially if your darling spouse is a carrot cake fan. Use this recipe – you can’t go wrong!

I LOVE the look of fondant on cake. You know that smooth frosting that looks so pretty and is seen mostly on wedding cakes it seems? Oooh, if only I could do this on every single birthday cake I made for my family…Oh wait, what? I can?? Most party stores have the option of buying pre-made fondant and is pretty easy to use and not too expensive. the downside? It tastes like chalk!  I then found this awesome recipe and tutorial on how to make marshmallow fondant.

What a brilliant idea! Marshmallow frosting! YUMMY!  So I tested it out on my daughters birthday cake this past year.  And you know who was caught gobbling this up and begging for more?? Hint…It wasn’t my daughter…

Try marshmallow fondant on your hubby’s next birthday cake and he sure will be pleased! (I bought circle cookie cutters from Michael’s to use for cutting out my polka dots.)

If fondant isn’t your thing, maybe this idea will be “FORE” you!

I about died when my friend showed me the cutest “Cupcake cake” which was decorated to look like a golf course. This cake is the perfect choice for any avid golfer. My husband’s favorite thing, besides me…lol, is golfing! It’s one of his passions, and he’s pretty darn good at it too! I am SOOO not a chef {that would be our Diva, Kari} but I decided to bite the bullet and produce a golf masterpiece for my man anyway. He is definitely worth the effort!

If you would like to recreate this…here are a few tips/ingredients I will pass along.

  • FIRST, frost all the sand traps with white frosting AND frost the rest of the cupcakes with green frosting.
  • The sand trap is made from crushing Vanilla Wafers into dust …ok, ok, not dust…but it sure crunches up great and it looks SO realistic! Just roll the tops of 6-7 cupcakes in it.
  • The “green” (area around the hole) is just those green crystal sprinkles you buy…it also looks SUPER realistic! Roll the tops of 7 cupcakes in this.
  • I took the “easy” way out and instead of doing a million and one blades of grass, I dyed coconut green and sprinkled that on top of the cupcakes that were representing the “rough.”
  • I cut out fruit leather to create the flag, a pretzel stick is the pole, and an over sized chocolate chip turned upside-down is the hole.
  • The golf ball…GULP! That was hard! It’s a gumball dipped in corn syrup and then coated with white sprinkles. It is balancing on a yellow smartie … as the tee!

That is everything you need to know to recreate this fabulous Golf Course Cake “fore” your man. He is going to love it…my man sure did!

Lastly, we have another cupcake idea that your man is sure to love. Peanut Butter Cupcakes!! Need I say more?? It started this year, and WILL be a tradition for my hubby’s birthday here on out. He is so in love!! And they are incredible! The recipe comes out of the most amazing book… 101 Gourmet Cupcakes in 10 minutes, by Wendy Paul, AND it’s your lucky day! Wendy has given me permission to share this recipe as a sneak peek of her book with all of you!!


1 box of chocolate cake mix

3 eggs

1 cup milk

1 bag of chocolate peanut butter cups

Mix together cake mix, eggs, and milk. Pour 2 tablespoons of batter into paper liners and place peanut butter cup on top. Fill papers 3/4 full. Bake at 350 degrees for 15-18 minutes. Remove from oven and allow to cool.


1 cup of peanut butter

1/2 cup of butter (room temperature)

2 cups of powdered sugar

3-4 Tbsp. of milk or cream

1 tsp. of vanilla extract

Cream butter and peanut butter together in a bowl, mix until light and fluffy. Add sugar, 3 Tbsp. milk or cream and vanilla. Start slow, mix together increasing the speed. Mix until smooth and creamy. Add 1 Tbsp milk or cream if too thick.

    My favorite birthday memory is when I was turning 20. I was living away from home, and my mom had gotten a hold of one of my roomies and sent little presents for me to recieve throughout the day. I felt so special!!!

    My most memorable birthday was my twenty third. I had just gotten home from my mission a few months prior. My younger sister threw my a party and invited lots of new friends and old friends. I enjoyed a fun party where I was blind folded and the party guests got to do whatever they were told to do by my sister who was behing me. I game is called slap, hug,kiss,so the person will either be told to slap, hug, or kiss the person that is blind folded in this case it was meand then I got to guess who it was that either slap, hug, or kissed me. It was a very fun and interesting game.

    Hubby and I have both been married before, so we get the wonderful opportunity of knowing a lot about marriage, but relatively little about each other. How exciting! His 9 siblings are so great and supportive; last year, his older sister sent us some homemade Dutch apple pie filling (hubby’s favorite!) for Christmas. I got the hint and made Dutch apple pie. He was so excited to have an early birthday treat! Before dishing it out, he took a few pictures of it… “I want to remember what it looks like even though it’ll be gone in about two days!” What a great birthday!

    One of my favorite birthdays was my eighth birthday. My Grandma took me to Leatherby’s and I got to order the biggest ice cream sundae they had. It was wonderful!

    My favorite birthday memory was when I turned 16. My two best friends snuck into my room and DECKED it out with balloons, confetti, streamers, notes, and gifts. And I mean DECKED!!! I couldn’t even step into my room it was so packed and I’m pretty sure they used a whole bag of confetti just to dump into my bed under the comforter. I felt so loved!!

    My husband has a strange fascination with ninja turtles, so last year i had a blast dressing up his birthday party with ninja turtle banners and a man hole (that I made myself), turtle cupcakes, green ooze punch, green jello, and pizza! We had a bunch of his friends and their kids over and had a blast playing games and using our best ninja voices.
    The whole thing was a blast! I even made my hubby ninja turtle pj’s! I think I had more fun putting the whole occasion together than anything else.

    My man’s fav birthday treat is pumpkin pie. My fav bday was before my husband and I were married he took me to my first art museum in Chicago, a 3 1/2 hour train ride each way. It was a surprise, he wouldn’t tell me where we were going, what we were doing or anything :)

    One of my favorite birthday memories was my 26th…my husband helped coordinate an entire day of fun for me, including a fun lunch on Santa Monica Pier with a bunch of friends, then drinks at a swanky Santa Monica hotel bar, then a super-fun karaoke night at a local bar…and the BEST part was…he led the ENTIRE bar in singing happy birthday to me on the microphone, and then surprised me with a beautiful cake he had specially made for me…pink and black…my favorite!!! I felt so special and loved my all my friends, and especially my hubby :)

    Before my husband and I were married….or even engaged….he took me to Europe with his family for my birthday. We spent my actual birthday in Paris and he sang happy birthday to me under the eiffel tower. It was definately the best birthday ever!!!

    My favorite birthday memory was my last one! Hubby took me on a trip for the first time since our little guy was born. A glorious two days without any responsibility other than spending birthday money, eating great food, going to the temple, and sleeping! We celebrated with our baby before I left and it was so sweet to have the best birthday present ever!

    I decided that I wanted to spent my birthday weekend in portland oregon and just have a no stress no kids type of weekend. Great idea, right! Well my husband said he wasn’t going to be able to make it up there with me because he had to work. He is only a homa a few nights a month because of his job. But by that time I had everything all planned, reserved and paid for. So I figured I would still go by myself. So I got to portland and was getting off the plane thinking to myself, I really wish he was here, and no sooner I thought that to myself I looked up and he was standing there!!! 😀 The weekend couldn’t of went better!!!

    I love being suprised! Last year for my birthday my husband totally suprised me. He’d been sweet to me all day but I hadn’t gotten anything from him yet. We both left for work that day. A few hours later I returned from work. My house was totally decorated with balloons, birthday signs, and confetti! On the table was a cake made by him, (which meant a lot considering he hates to cook) and a bunch of gifts. It was my first birthday as a married woman and one I will never forget!
