Mexican Fiesta Recipes You’re Family Will Love!
This meal would make for a really fun date night with your hubby or with a group of friends! You could make these together or as a group.  You could even make them ahead of time for your date. Some other ideas for a Mexican Fiesta night might include: Dressing the part, Pinata, Salsa Dancing, or watching “Dance With Me”. Don’t forget the decorations! Lots of bright colors, lights, and music will make for a festive setting.

 What I love about this Enchilada recipe is that you can change it up so it never tastes the same. I’ve tried all 3 flavors of enchilada sauce and I love them all. I usually make the red because my husband loves hot and spicy things (obviously, since he married a redhead ;)).

Enchiladas
2 cans Chicken Breast; drained & flaked
2 cans diced chiles
3 Roma tomatoes; diced
4 green onions; diced
Black Beans; drained & rinsed (optional)
Sharp cheddar cheese; shredded
Enchilada Sauce (Red is hot, green is medium, white is mild)
La Victoria Salsa Verde
½ cup Sour Cream
8 oz. Cream Cheese
Spanish rice (optional)
9-15 Large flour tortillas

Mix chicken, chiles, tomatoes, onions, 8 oz. of cream cheese, ½ cup of sour cream, ¼ can of enchilada sauce and ½ of the Salsa Verde together and set aside.
You can layer them however you choose. I like to layer mine with cheese, chicken mixture, Spanish rice, and black beans on top – then wrap them up as shown below. I layer mine this way so that the cheese is on top and the beans end up on the bottom in the pan.

 Spread half of the remaining enchilada sauce on the bottom of your pans (this recipe will make 1 ½ to 2-9×13 pans depending on how full you fill your tortillas). As you fill and wrap up your enchiladas, place them snugly together in your pan(s). Top with remaining enchilada sauce and shredded cheese. Bake at 350 degrees for about 20 minutes.

 Other options: green or red peppers, steak, beef or crab meat, or frozen vegetables.

 This is a yummy follow up to any Mexican dish! When you pair it with a scoop of ice cream it tastes just like fried apples and ice cream. Mmm!

Apple Crisp

1 cup butter, cold
1 cup brown sugar
1 cup flour
1 cup oatmeal
¼ tsp. baking powder
6 fresh apples, peeled and sliced
½ cup sugar
¼ tsp. salt
1 tsp. cinnamon
In large bowl, mix butter, brown sugar, flour, oatmeal, and baking powder just until batter is broken up and ingredients are mixed. Mixture should be crumbly. Set aside. Place 6-8 apples peeled and sliced in 9×13-inch pan. Sprinkle with sugar, salt, and cinnamon. Crumble crisp topping on top. Bake at 350 degrees for 45 minutes or until golden brown. Serve warm or cold, with whipped cream or ice cream.

  3. @sourkraut – Haha! You caught me! baha, sorry I didn't throw that mention in the recipe. What I meant to mention was that I do add cream cheese, but you don't have to. I know some people like the healthier meals option, but the cream cheese really adds a lot of deliciousness to the recipe! Mmm. I put in all 8oz and less sour cream. I go off of the consistency of the mixture, so if it's too thick – add more sour cream or cream of chicken soup.

  7. Yum! Those enchiladas look delicious! I see cream cheese and sour cream in the photo but they're not mentioned in the recipe. Kind of looks like the chicken mixture has cream cheese in it, which is only making me hungrier. Should I add some in? How much?
